Ingredients for 6 servings:
• 2kg tomatoes, ripe
• 2 onions
• 2 cloves of garlic
• 8 tablespoons of olive oil
• Salt, pepper, thyme, oregano, rosemary
• A few drops of balsamic vinegar
Preparation:
1. Boil the tomatoes in a pot of water until they start to peel. Keep a glass or so of this water aside to add later if you want, to your soup. Remove the skin from the tomatoes and cut them into smaller pieces.
2. In a saucepan, saute the chopped onion, garlic and a little of all the aromatics in the olive oil.
3. Then add a few drops of balsamic vinegar and then add the tomatoes.
4. Add the rest of the spices (as much as you prefer) and let the soup boil over medium heat for about 20 minutes. With a blender, melt the soup until the ingredients are dissolved and continue boiling for another 10 minutes on low heat. For a thinner texture, add some of the reserved water.
5. Cut the halloumi into thick slices and put them on the grill. Cut the slices into small cubes and serve them in the soup.
