Small Halloumi pies

Portions: 25 pcs / Preparation: 20' Waiting: 1 hour / Baking: 20' – 25'

Ingredients for the dough:

• 500gr. all-purpose flour + a little more for the surface

• 2 tsp. sweet baking powder

• 220ml olive oil

• 350 – 400ml orange juice

  • minimal salt

• Sesame seeds

For the filling:

• 450gr halloumi, passed through the coarse side of the grater

• 1 bunch fresh mint (the leaves), chopped

• 2 eggs, preferably organic

• freshly ground pepper

Preparation:

Dough:

In a large bowl, sift the flour and add the baking powder and a little salt. Add the olive oil and mix the mixture with our hands, rubbing it with the tips of our fingers, so that the flour gets wet and becomes a crumbly mixture with small lumps.

Then pour the orange juice, in portions, stirring, until the lumps dissolve and make a medium dough (we may not need all the liquid).

Knead the mixture with your hands for about 6-8 minutes, until the dough becomes soft, fluffy and pliable. Cover the bowl with the dough and put it in the refrigerator for 1 hour, so that the dough will firm up slightly and be easily shaped.

Filling:

In a large bowl, mix well the grated halloumi, mint, eggs and pepper.

Pies:

Preheat the oven to 180° C. Line two large and shallow pans with non-stick paper. Take pieces of dough, weighing 40-45g. each.

Press them with your palm on a flat and lightly floured surface (or open them slightly with a rolling pin), until you make dough discs 2 millimeters thick.

Put about 1 full tsp. of the filling in the center of each dough disc and roll them into rolls or into the shape of your choice, slightly tight. Place the rolls in rows in the pans and sprinkle them with sesame seeds. Bake them for 20-25 minutes, until they are slightly golden.
